I’m a massive fan of Mexican food mainly because I love using spices, as you’ve probably noticed.

I may be biased, but this is the best cauliflower rice recipe ever.

When I was living in the UK, I had a spice pantry just as abundant as the one we have in Canada, and I used it daily.

One of my favorite recipes was Mexican Beef and Pita Chips baked in the oven with sour cream and cheddar cheese. It’s to die for!

Now that we live a Keto lifestyle, we’ve been working on creating healthy, low-carb, gluten-free meals.

They fill us up, so we aren’t looking for unhealthy snacks between meals.

Switch Up The Recipe

What I love about this Taco Cauliflower Rice Stir-Fry is that you can switch up your mince.

So, today, you might follow my recipe using minced beef, but the next time, you can use ground lamb, ground chicken, ground turkey, and so on.

It’s a great way to switch up the recipe along with adding a different variety of keto vegetables such as ;

Where Can You Buy Cauliflower Rice?

You can buy a whole cauliflower at almost every grocery store in Canada, although it can sometimes get pricey.

Can cauliflower be frozen?

Yes, you can freeze cauliflower, so if you find a deal on fresh cauliflower, you can rice it or chop it into florets and freeze it for up to three months.

We’ve found cauliflower rice at Loblaw stores in the vegetable refrigeration unit located in the produce section and at Costco.

You may find the florets far more than you do the cauliflower rice.

How do you prepare cauliflower rice?

Cooking cauliflower rice is easy since the florets are pulsed into small crumbles; however, it depends on your method.

Whether you like your cauliflower rice stir-fry with a bit of crunch, the cooking time will vary, so be sure to taste it as you cook it.

Adding fats such as butter or extra-virgin olive oil, bacon fat, avocado oil, coconut oil, and broth is a great way to add flavor and speed up the cooking process.

If you don’t want to add protein or vegetables, stir-fry in fat and broth, then season with salt and have fried cauliflower rice.

Fried cauliflower rice is a great side dish for lunch or dinner, and it is one that we make often.

We’ve had cauliflower rice stir-fried sans mince with fried eggs and sauteed spinach or rapini. It’s so good.

How To Make Mexican Taco Cauliflower Rice Stir-Fry

In 30 minutes, you will have Mexican Taco Cauliflower Rice Stir-Fry ready to eat, provided you have your ground beef or whichever mince you use defrosted.

I suggest taking it out the night before if you have it in the freezer and defrosting it in the refrigerator.

If you have a whole cauliflower, add it to your food processor and pulse it until it resembles rice or crumbles.

Perhaps you don’t have a processor or aren’t in the mood to crumble it; you can chop the florets like we did for our Mexican Taco Cauliflower Rice Stir-Fry.

We used Organika Beef Bone Broth for this recipe and added water to hydrate it.

However, if you don’t have it, you can use bouillon cubes, boxed broth, canned broth, or homemade bone broth.

They all work equally as well, but the nutrient factor will change.

You can eat the mixture above or add sour cream, shredded cheddar, or your favorite hot sauce.

I think it’s a must, but it depends on your food tastes.

If I had some pork rinds, I could load this mixture on top, add shredded cheese, and bake them.

Homemade Taco Seasoning (You can use this instead of the spices in my recipe) Add 2-3 tablespoons.

  • 1lb ground beef
  • 1 cup beef bone broth
  • 1/2 cup sliced green manzanilla olives (optional)
  • 1/2 cauliflower riced or chopped (265 grams) 1/2 pound
  • 1 tbsp tomato paste
  • 1/2 cup extra virgin olive oil
  • 1 tsp pink Himalayan salt
  • 1 tsp fresh ground black pepper
  • 1 chopped spring onion
  • 1 medium tomato chopped
  • 1 cup salsa
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 2 bay leafs
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp oregano

Instructions

  1. In a large skillet, brown your minced beef, drain it, and set aside.
  2. Add your broth, tomato paste, lemon juice, olives, salsa, bay leaf, paprika, cumin, chili powder, onion powder, oregano, pink Himalayan salt, and pepper in the same frying pan.
  3. In another skillet, add your olive oil and garlic, then your spring onion and cauliflower rice, and then stir-fry until tender or the consistency you prefer is about 10 minutes.
  4. Add the beef to the cooked cauliflower and stir, then add your liquid mixture. (remove bay leaf) then serve.
  5. Cook for 5-7 minutes until the liquid has soaked into the beef and cauliflower.
  6. Add pico de Gallo (oil), shredded cheese, sour cream, Greek yogurt, and and hot sauce as optional extras.
